مصنعات الدجاج بالمجازر الألية و أهميتها ولذلك .تتعدد الأجزاء المصنعة من الدجاج الكامل . وذلك وفقا لرغبات المستهلكين ومتطلبات الأسواق ومقدمي خدمة الوجبات السريعة. مما أدى الي زيادة القدرة التسويقية للمنتج , فبدلا من تسويق منتج واجد دجاج كامل مبرد أو مجمد .

أصبح هناك العديد من المنتجات يمكن تصنيعها من الدجاج اللاحم .و سنأتي على ذكر بعضا منها و الأكثر انتشارا و ذلك باختصار شديد .

الدجاج المــــــــــــــــبرد chicken cut / BROILERS

لحم الدجاج الكامل

هو لحم الدجاج اللاحم المربى خصيصا لإنتاج اللحم .والمذبوح وفقا لإحكام الشريعة الإسلامية . خاليا من الأمراض و الدجاج اللاحم الكامل , و يتم تصفية الدم منه, والمنزوع الرأس و الأرجل الخالي من الريش والزغب و الأحشاء والغدة الدهنية .

 قطع الدجاج الكامل

هي أجزاء من الدجاج الكامل , مثل الصدور والأفخاذ والأجنحة و السيقان و أنصاف الدجاج و الأرجل الكاملة (الفخذ + الساق ) .

الشروط الخاصة بالمنتج

  1. أن يكون من دجاج سليم خالي من الأمراض .
  2. أن تكون منطقة اتصال الرقبة مفتوحة على تجويف البطن.
  3. أن لا تزيد الفترة بين الذبح والتخزين على أربع ساعات .
  4. أن يكون المنتج خاليا من الهرمونات والمضادات الحيوية و المواد الملوثة والحافظة و مواد التطرية والمنكهات و مواد إزالة الألوان.
  5. أن لا تزيد مساحة التمزق على مساحة دائرة قطرها (30 مم )بالنسبة للصدور والأفخاذ و (4 مم ) للأجزاء الأخرى .
  6. 6-  أن لا تزيد مساحة البقعة اللونية الناتجة من الكدمات على مساحة دائرة قطرها( 2 مم )في منطقتي الصدور والأفخاذ و 60 مم في الأجزاء الأخرى .
  7. 7-  أن لا يزيد عدد العظام المفصولة عدا عظام الذيل و أطراف الأجنحة و مفاصلها على اثنين .
  8. تتم تعبئة الدجاج الكامل و أجزائه في عبوات صحية نظيفة و سليمة .

 سجق الدواجن (نقانق)

سجق دجاج

هو منتج جاهز من لحم الدجاج المبرد أو المجمد الخالي من العظم والمفروم ,مع توابل و ملح وإضافات غذائية و مواد حافظه مسموح بها ثم حشوها في أغلفة طبيعية أو صناعية.

 الشروط الخاصة بالمنتج

  1. يجب أن لا تقل نسبة لحم الدواجن عن (85 % من الوزن الكلي للمنتج.
  2. يحتوي على أملاح للإنضاج (كلوريد صوديوم بنسبة 3 % بالكتلة كحد أقصى ونيترات صوديوم أو بوتاسيوم بنسبة 125 جزء في المليون كحد أقصى ).
  3. يسمح بإضافة مواد مالئة مثل بقسماط قمح أو نشا بطاطس أو نشا أرز أو أرز مطحون أو خبز بسكويت أو دقيق ذرة بنسبة لا تزيد 3.5 % بالكتلة متفردة او مجمعة .
  4. يسمح بإضافة مواد رابطة ,مثل مسحوق حليب فرز أو بروتينات صوديوم أو جلوتين قمح أو بروتين بيض .

لحــــــــــم الدجاج المفروم

منتج يتم تجهيزه بفرم لحم دجاج خال من العظم مبرد أو مجمد واللحم المفروم والمبرد يتم تبريده عند درجة حرارة( -5. الي 1 م ) اما اللحم المجمد فيتم تجميده عند درجة حرارة لا تزيد على لا تزيد عن (-30.).

الشروط الخاصة بالمنتج

  1. أن تكون حبيبات الدهن متجانسة التوزيع .
  2. أن يكون المنتج خاليا من النشا أو الألياف أو البروتينات النباتية .
  3. يسمج بإضافة حمض الايزوسكوربيك وحمض الاسكوربيك واملاحمها من الصوديوم بحد أقصى (500جزء في المليون) منفردة أو مجتمعة .
  4. أن تكون درجة حرارة الدجاج المبرد أثناء التجهيز (10م).
  5. في حالة تجهيز لحم دجاج مفروم من لحم دجاج مجمد يجب أن تتم عملية الفرم عند درجة حرارة (-4م) ولا يتم التذويب كاملا ثم يعاد التجميد في درجة حرارة (-30م) خلال (90) دقيقة بأسرع ما يمكن .

الدجاج المفروم

منتج يتم تجهيزه بفرم لحم دجاج خال من العظم مبرد أو مجمد واللحم المبرد تم تبريده عند درجة حرارة (-5. م) الي (1 م).

أما اللحم المجمد ,تم تجميده عند درجة حرترة لا تزيد عن (-30م) و يتم التجهيز في حيز تصنيع لا يزيد عن (10م) ولا تزيد فترة التجهيز عن (3) ساعات. يعقبها تبريد سريع أو تجميد سريع للدرجة المطلوبة والتجميد يتم عند (-30م) خلال 90 دقيقه مع إضافة بعض التوابل وفقا للإنتاج الجيد و نسبة الدهن في المنتج لا تزيد عن 15 %.

منتج مجهز , من لحم الدجاج المبرد أو المجمد الخالي من العظم والمفروم مع ملح و بعض المواد كالدقيق 50 جم/كيلو لحم و 50 جم كيلو / شحم و مواد أخرى منكهة حسب الرغبة مع (200) سم مكعب ماء مثلج.
